Proofers are essential to any bakery and restaurant that bakes menu items in-house. 

Proofing cabinets are essential for pizza operations that make crust in-house and/or bake from scratch. Unlike the open air, the temperature and humidity levels reached in a proofing cabinet are ideal for allowing dough to rise to perfection.

Here, George Loredo, service manager at PROTEX Restaurant Services Inc. in Corpus Christi, Texas, details the necessary cleaning and maintenance tasks for proofers.

The PBC 6/18M Proofing and Baking Center bakes cookies, cakes, muffins, bread, croissants and other confections. Features include a 5.7-inch LCD display with touch-screen control. A programmable recipe feature accommodates 18 baking and 5 proofing recipes. The center provides 5,000 watts of baking power and 1,000 watts of proofing power.

The INHPL-1825-UNC-2D-DGT insulated Dutch door heater proofer combines universal runners in the heater proofer cabinet with insulation and Dutch doors for efficient energy consumption. Constructed with heavy-duty aluminum, the proofer utilizes a forced-air design to evenly distribute heat. The universal runners in the cabinet accommodate steam pans and sheet pans.

Immersion blenders, or stick mixers, come in several different sizes and types. Keep in mind the longer the shaft, the more stress will be put on the components. That means sizing represents a key consideration with this equipment.

When choosing a juicer, anticipating volume is critical. Operators can choose from a variety of juicers, depending on the application, speed of service needed and beverage type being created. Operators also need to determine what type of foods they will use as some juicers handle leafy greens and vegetables better than others.
