Here are the most recent food safety violations in Lebanon County, as documented by Pennsylvania’s Department of Agriculture.

Inspections are taken as a “snapshot” of the day and time, and should not necessarily be taken as overall indicators of an establishment’s cleanliness. Violations are often corrected prior to the inspector leaving the site. Restaurants were found to be in compliance unless otherwise noted.

6 – 301.11 Handwashing Cleanser, Availability A new handwashing sink was installed in the area past the bar; towels, a sign and trash receptacle are needed.

4 – 302.14 Sanitizing Solutions, Testing Devices Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration in the area of the new 3-compartment sink.

4 – 601.11(A) Equipment, Food Contact Surfaces, Nonfood Contact Surfaces and Utensils The interior of the ice machine, a food contact surface, was observed to have residue and was not clean to sight and touch.

6 – 501.11 Repairing-Premises, Structures, Attachments & Fixtures-Methods Each breaker in panel boxes must be accurately labeled, pressure relief valve on the hot water heater must extend within 6″ of the floor, and GFCI outlets must be installed by the new 3-compartment sinks.

4 – 602.13 Nonfood-Contact Surfaces Non-food contact surfaces, shelving, not cleaned at a frequency to preclude accumulation of dirt and soil.

3 – 501.16(A2)(B) Time/Temperature Control for Safety Food, Cold Holding All food was held at 45-47 °F, in the refrigerated display case, rather than 41°F or below as required. Food was checked in various locations through the case, the thermometer had just been checked for accuracy, and the person in charge voluntarily removed the affected items. The manager requested service for the refrigerator. The evaluation and repair will be forwarded to the inspector as proof of correction.

6 – 501.114 Maintaining Premises, Unnecessary Items and Litter Litter and debris on floor in warehouse area.

4 – 903.11 (A-B)(D) Equipment, Utensils and Linens, Storing Observed clean food equipment and/or utensils in dish area, stored wet in a manner that does not allow for draining and/or air drying (wet nesting).

4 – 601.11(A) Equipment, Food Contact Surfaces, Nonfood Contact Surfaces and Utensils Assorted food containers on drying shelf observed to have food residue and were not clean to sight and touch. These were removed and washed again. Ice machine not cleaned at a frequency to prevent the presence of mold.

6 – 501.12 Cleaning, Frequency and Restrictions Litter and debris under equipment.

3 – 501.16(A2)(B) Time/Temperature Control for Safety Food, Cold Holding Assorted food in prep area baine marie was held at 43-46 °F, rather than 41°F or below as required. The food was voluntarily discarded and the baine marie refrigerator is scheduled for repairs. The owner will forward a copy of the service report to the inspector. Assorted food(chicken, shrimp, processed foods) were held at 47-52 °F, in the walk in refrigerator, rather than 41°F or below as required. This included eggs held at 50 °F, rather than 45°F or below as required. The affected food was voluntarily discarded and the Walk in refrigerator is scheduled for repairs. The owner will forward a copy of the service report to the inspector.

4 – 602.13 Nonfood-Contact Surfaces Non-food contact surfaces, such as counter by hand sink and shelving not cleaned at a frequency to preclude accumulation of dirt and soil.
